The people & philosophy behind the bistro
Our Concept
At the Juniper Bistro, we believe great food begins with great ingredients. Guided by a plant-rich philosophy, our menu celebrates the natural flavours, textures, and versatility of vegetables, fruits, grains, and thoughtfully sourced proteins.
Rather than relying on substitutions, we focus on creating balanced, seasonal dishes that feel connected to the landscape around us.
Living and operating within Banff National Park comes with a responsibility to care for the environment, and our approach to food reflects that commitment.
By embracing ingredients that are abundant, seasonal, and locally inspired, we aim to create memorable dining experiences that are as thoughtful as they are delicious.
Meet Chef Sergio
Executive Chef Sergio Garcia brings creativity, curiosity, and a deep respect for the seasons to every dish served at the Juniper Bistro.
Drawing inspiration from Alberta’s ever-changing landscape, he builds menus around the ingredients each season has to offer, from spring greens and summer berries to autumn squash and winter preserves.
Through techniques such as roasting, fermenting, curing, and pickling, Chef Sergio creates dishes that are layered, vibrant, and rooted in place. His approach is guided by a simple belief: food should celebrate the ingredients at its center while fostering a stronger connection to the land and the people who share it.
Our Patio
Perched on a hillside overlooking Banff, the Juniper Bistro patio offers panoramic views of the Bow Valley and surrounding mountain peaks.
It’s the perfect place to linger over a meal or a drink while soaking in the sunshine, fresh mountain air, and some of the most spectacular scenery in the Rockies.
Our Place in Banff National Park
Banff National Park, Canada’s first and most storied protected wilderness and a UNESCO World Heritage Site, encompasses a vast reserve of dramatic peaks, glacial waters, untamed forests, and remarkable ecological integrity.
Elk move through open meadows, bears roam forested slopes, and the Bow River cuts a cold, clear line through it all. Days here are defined by the season – paddling into untouched terrain on spring runoff, skiing dry powder in winter, or tracing quieter fall trails that reveal golden larches. In summer, access opens to iconic Lake Louise, Moraine Lake, and the glaciers along the Icefields Parkway.
Set overlooking the valley, the Juniper Hotel & Bistro stands on ground that has forever drawn people to this region. Long before it became a hotel, this was a place of gathering – where the Ktunaxa, Secwepemc, Métis, Tsuu’tina, Mountain Cree, Blackfoot, and Stoney Nakoda peoples returned seasonally, sharing knowledge, food, and medicine over thousands of years.
Indigenous Art at the Juniper
The Juniper uses the connection it has to the land to shape the experience today, offering discerning guests a more grounded stay in Banff: architecture that opens onto the vast panorama and native plant gardens, Indigenous art representing communities from across Canada, menus rooted in the region, and a pace that encourages slowing down and settling into the moment rather than moving past it.
Discover a selection of the Juniper’s Indigenous art here, or scan the QR codes located throughout the hotel to explore the stories and inspiration behind each piece.
Our Team
What sets the Juniper experience apart is the genuine care and attention guests receive throughout their visit. From the moment they arrive, the team creates an atmosphere that feels welcoming, relaxed, and distinctly personal.
This approach is exemplified by Restaurant Manager Leonardo Homen, whose passion for hospitality helps shape the character of the dining experience. His ability to connect with guests, share local knowledge, and create a sense of belonging contributes significantly to the warm and inviting atmosphere for which the Juniper is known.
Dining at the Juniper is built around connection and storytelling. Through conversations about the menu, the region, and the people behind the experience, guests gain a deeper appreciation for both the food and the destination.
Guest Reviews
Reservations are recommended, particularly during weekends, holidays, and peak travel periods over summer and winter. Walk-ins are always welcome when space is available.
Our patio is seasonal and weather dependent. During the warmer months, guests can enjoy the Juniper’s unforgettable mountain views while dining outdoors. In winter, the patio is open for Fireside Sunset events and s’mores.
The Juniper Bistro offers a seasonally inspired menu rooted in the Canadian Rockies, featuring plant-rich dishes alongside thoughtfully sourced animal proteins. Menus evolve throughout the year to reflect the seasons and the ingredients available. This cuisine is referred to as ‘New Canadian’.
